Recipe
First step- To make brinjal bharta, you have to take a big bare brinjal. While purchasing brinjal, note that the brinjal is lighter and there is no hole or folded from above. Such brinjal is low -seeded and without worm.
Second step- Finely chop 2 large onions to insert the brinjal bharta. Grind about 5-6 buds of garlic. There is more tomato in brinjal. For this, finely chop 3-4 large tomatoes. Cut 2 green chillies and a little green coriander.
Third step- Now wash the brinjal and remove the peel and cut the brinjal into small pieces. If there are more seeds in brinjal, remove. Now add mustard oil to the pan. When the oil is hot, add fenugreek seeds, cumin and asafoetida.
Fourth step- Now add finely chopped onion, garlic and green chillies and fry it. Now add dried spices turmeric, salt, coriander powder and red chili. After this, add finely chopped tomatoes. When the tomatoes melt lightly, add finely chopped brinjal and cover it.
Fifth step- Cook the brinjal until melting. When brinjal and tomato melt, mash them well. Mix all the things and prepare it like Bharta and fry lightly. It is ready to cut brinjal, cut green coriander on top.
